- artificial flavors.
Artificial flavorings are more stable and profitable than natural flavorings, however, their use is recommended only in processes where natural substances may alter.
NATURAL SUBSTANCES SUCH AS MEAT FLAVORINGS
Natural substances as they are, if prepared or stored badly, are also not recommended; in fact, they can be a cause of pollution of meat products (cf. The choice of natural products should be made according to a criterion of hygienic-bacteriological safety.
Meat flavorings derived from natural substances are the simplest and safest; keep in mind that many of these flavorings can play also useful antibacterial, antioxidant and anti-mold side actions.
